An early sparkling wine experiment produced during my studies in viticulture and oenology.

The wine was made using the Méthode Ancienne, bottling the ferment before it had finished so that the remaining sugar could complete fermentation in bottle and create natural carbonation.

No secondary.

Each bottle was labelled by hand as part of a small experimental run exploring ancestral sparkling techniques.
